If you have a freezer full of fish, there comes a time when you want to get a little creative. You can only have it deep fried so many times before the pallet just gets bored. We scored a major meat haul on our recent trip to Alaska's Kenai Peninsula, and are just about through our stash of flat fish. Here is one of the awesome ways my wife, Ashley Nguyen, cooked up our halibut. It will kick you right in the mouth, and you can make it as spicy (or not) as you want. For the record Ashley is Vietnamese, so we are blessed with heavy Asian influence in lots of our dishes; I love it. Although the Vietnamese do cook with curry, they use it differently than we will in this dish, which is heavily influenced by Thai cuisine.
Spending time with the kiddos is one of the great joys in life; Any time we can find a way to learn AND maybe get a little food out of it... all the better!
New York BBQ: For some reason it cues the image of a couple millennials living off their parents' dime, shelling out 2000 a month for 600 sq ft and aggressively stoking fires in antique wrought iron grills. Their neck beards sweat profusely as they desperately try convincing the world that their sausages are bigger than everybody else's. I may be a little partial, but Texas, KC, Memphis and the Carolinas are where it's at.. sorry guys.

I finally decide to explore the headwaters of a local flow, and wouldn't you know it gets blown out!? I don't want to name names but let's just say it rhymes with lifeless squeak. Four inches of rain the night before and it's slow to drain. But I'll be back. Oh yeah, with fly rod in tow. I am determined to root out some creek largemouth and some uber aggressive sun fish.
We don't always recognize how much we have until it's gone. The American model of conservation is unique and was born of immigrant people who had witnessed the systematic destruction of most wilderness areas in continental Europe. With all of our modern luxuries, it is easy for people to get wrapped up in what is easy or convenient.. but let's not let this one come crashing down. Not on our watch...
Leaning across my wife and daughter to peer out the window during our plane's descent, I come to several conclusions. It must be very cold outside, because the mountain presenting itself to the west is covered in snow; a couple jack and cokes can nearly erase a four hour flight; and traveling across country with a one year old in tow is possible, as evidenced by the crumpled up lion and giraffe stickers barely gripping the chilled window of the cabin.
